With the temps as hot as they are and trying to manage the heat with our off-grid, solar-powered AC, I've been making a lot of salads lately. I don't really want to cook and add to the heat! LOL And honestly, I LOVE salads. They are light and refreshing and so versatile. They are easy to make and can be served in so many different ways.
Today's #saladsaturday selection includes:
🥬Mixed greens with avocado, red onion, pecans, feta, apples, and blueberries with a maple vinaigrette dressing...OMG!!!
🥬Wild caught canned salmon salad on half an avocado....OMG (and KID approved!!!!!). Put on a wrap, sandwich, avocado, or on greens.
🥬Canned chicken salad with grapes, apples, and pecans (kid approved) Put on a wrap, sandwich, avocado, or on greens.
🥬Prosciutto, olives, and feta on romaine with white balsamic Dijon vinaigrette (didn't even let kids taste it! LOL)
🥬Apples, walnuts, feta, and a bit of red onions on romaine with a lemon, Dijon vinaigrette.
🥬Chopped romaine & cabbage with carrots, almonds, sesame and an asian ginger dressing with coconut aminos
My body literally thanks me when I eat greens. It sings a little song inside 😃These are just a fraction of the salads I make, and these are just from the last 10 days or so. Also, I don't always remember to take a picture.
