Dinner was brought to me by a lucky pantry find: some red curry paste I purchased sometime ago! Talk about a flavor powerhouse! If you have access to curry paste at your local shop, pick some up next time you are stocking up!
Here's a very simple recipe:
Red curry paste (my little can probably head 5 tbsp)
1 can coconut milk
1 block extra firm tofu, chopped
3 carrots, washed, peeled, and chopped
1 red bell pepper, julienned
Broccoli, cut into florets
Cooked brown rice
1.Heat the oil in a large skillet/ wok and add tofu. Cook until brown on all sides, and season with a little salt.
2.Add in the curry paste and coconut milk, stir to dissolve the paste into the milk. Simmer on medium heat for 5-8 minutes to allow tofu to soak up flavor.
3. Add in carrots, cook for 2-5 minutes (depending on how much bite you want them to have). Add in peppers and broccoli, cook until broccoli are just cooked through but still have crunch.
4. Serve on brown rice and enjoy!
